Diamond Springs Vineyard is an artisanal vineyard and olive groves situated on a 40-acre ranch along the Consumnes River in the Sierra Foothills of El Dorado County, California. The gravelly river soil and south facing slopes, nestled beneath high canyon walls, provide a perfect microclimate for growing Cabernet Sauvignon grapes and Tuscan olives. The ranch practices organic farming.

The olives -- Frantoio, Lecchino, Coratina and Pendilino varietals combined in the traditional Tuscan ratio of 50-20-20-10 -- were hand-picked from the Diamond Springs Vineyard Estate, and then brought to Bozzano Olive Ranch for milling. Bozzano uses a state-of-the-art hammermill press and centrifuge extraction and have a expeditious process, which is key to a quality product.

Only 150 - 500 ml. bottles of this wonderfully robust olive oil have been produced at this time. There are another 10 gallons reserved in stainless steel tank. With its spicy fruit, grassy undertones, and pungent peppery after-bite, it is not for the faint of heart. It has been certified by the California Olive Oil Council (COOC) as 100% extra virgin olive oil.

Enjoy this oils spicy, pungent flavor as a dipping, drizzling or "finish" oil, or in dressings.

This is FRESH, unfiltered, 100% extra virgin olive oil.
